jailbreaking is such a requirement for an ipod touch in my opinion
it makes the ipod to the full capacity
you can custimize your ipod and have themes
get all the paid apps for free
have a crapload of apps that make the ipod touch better such as 5 icon dock, bluetooth chat and much more

Yes you can resize it and fit the screen. There is no need for a certain resolution, although you can find it online of what it is.
Just have your pictures, and then you can rotate it (Using a free app) save it, then use the wallpaper as either landscape or portrait.
Don’t worry about that.
